I have personally used and can reccommend:

Firefox - web browser
Juice - podcasting receiver
VLC - multiformat media player with several other features
Mplayer - multiformat media player
Senuti - gets music off your ipod
Handbrake - rips DVDs to MPEG4 or H264
NeoOffice - MS Office alternative
Audacity - full-featured audio editing app
Seashore - Image editing program (scaled back version of GIMP - for OS X)
Cyberduck - FTP program
Fugu - SFTP program
Nvu - Website building program (somewhat like Dreamweaver)
Blender - 3D modeling/animation, editing, and compositing program

That's a really great list of OSS for OS X. It has a few things I'm going to have to try out (mostly Senuti - I didn't know there was a free program to pull music off of an iPod).

The only things I think they should add is Really Slick Screensavers - http://www.reallyslick.com/downloads.html - and GIMPShop - http://www.plasticbugs.com

As far as apps I've used that Andrew hasn't already listed:

Cyberduck is an FTP/SFTP program much like Fugu. Fugu is probably better laid out, but Cyberduck can do FTP in addition to SFTP.

Burn is a no nonsense burning app that's a bit too simplistic but works just fine.

The Democracy Player is pure, distilled awesome if you watch vidcasts (or would like to start), since it has a channel guide, will auto-download from any vidcast RSS feed, and let you watch whatever you want.
